HEAD CHEFDYLAN LEWISChef Dylan Lewis graduated from the Culinary Institute of America in San Antonio, Texas. After time spent abroad in Italy, at the world renowned Osteria Francescana where he learned to hone his skills, he gained an appreciation and understanding of Italian cuisine. Once relocated to St. Croix, he desires to use a blend of tradition and innovation as he works to create flavors that captivate dishes. With a dedication to sourcing the freshest ingredients and an unwavering commitment to culinary excellence, reflected in his ever changing menu, he hopes to share his love of the culinary arts with everyone who lives here and who visits.
